Rabbit bolognese arancino, parsley & garlic emulsion

Serves 1-2 | A twist on the Cin Cin classic. Slow cooked rabbit legs are bound in a bolognese sauce with risotto then rolled in breadcrumbs and deep fried until crisp on the outside, hot and gooey on the inside.

Served on with a pesto emulsion and fresh grated Parmesan.
