This week’s menu sees Jamie and the team making the twist shaped pasta called strozzapreti, the name historically translated as the “priest strangler,” originating from the Emilia-Romagna region of northern Italy.
Strozzapreti pasta is a larger version of cavatelli, traditionally rolled by the hand, giving it a light twist to finish. It’s texture has a doughy bite, perfect for mopping up ragu. The sauce we have made to celebrate this week’s pasta shape is a slow cooked lamb ragu, served with a whipped ricotta to balance the flavours of the season.

The lamb ragu we lovingly slow cook to give a rich earthy flavour is sourced from Calcot Farm, a family run business in Ashurst in the heart of Essex. Dave Jesse grew up on the farm taking care of the land and animals with his dad, and has supplied the finest local meats via Calcot Farm Produce for the last 10 years.
