We’re excited to announce our series of feasts of Italy – La Festa – exploring the regions of the food capital of the world. Join us to navigate you through four courses of Italian cuisine like a local, starting with antipasto, onto primo, then secondo and always finishing with something sweet.

Our feasts of Italy will be packed with flavour, full of fresh ingredients and a celebration of everything the region has to offer.

Our first stop is Rome on Wednesday 24th May at 7pm. Our four courses for £48 will take you on a whistle-stop tour of the culinary delights the Eternal City has to offer. Read on for the full menu and to book your place.

Our antipasti course includes Suppli cacio e pepe – Rome’s ultimate fried street food, a rice-filled fritter not to be confused with the classic arancino. Followed by our primo pasta dish of Bigoli all’Amatriciana. As the name suggests, the origin is the city of Amatrice in the far northern reaches of Rome’s region of Lazio.

The secondi of Porchetta with herbed quinto-quarto stuffing is a nod to the ancient Roman ‘nose to tail’ approach of using every part of the pig.

​​​​​​​And to finish we have a Crostata ricotta e visciole, a shortcrust pastry pie filled with layers of visciole (sour cherries) and sweetened ricotta. Originating from the Jewish quarter, to this day you can still enjoy it in Rome’s Jewish ghetto bakeries.

On the 29th March we hosted an amazing charity Arancini Event to raise money for The Sussex Beacon. The evening saw us welcome guest chefs from The Chilli Pickle, Wild Flor, Nostos and Boho Gelato, alongside our own chefs, who each prepared their own twist on the classic arancino.

The sold-out event was a roaring success and we were treated to some incredible mouthwatering arancino dishes, prepared by some of Brighton’s best chefs, including:

The guest judges award and the people’s choice award went to the hugely talented chef Alun Sperring from The Chilli Pickle with his delicious Kari Crab. Followed closely in second place by Cin Cin chef Mike’s Spring Agnello arancino.

The raffle on the night included some fabulous prizes donated by the restaurants taking part and we are pleased to announce from the ticket sales and the raffle we raised a staggering £1,720 for The Sussex Beacon, who provide specialist care and support for people living with HIV.

HIV remains a serious, life-changing condition with, as yet no cure. The public perception is often that HIV is no longer a threat in the UK, but every year over 5,000 people receive an HIV diagnosis. Early diagnosis, extensive access to HIV care and treatment, adoption of healthier lifestyles and good adherence to HIV medication can all help people live well with HIV.

The Sussex Beacon support people who are struggling to cope with HIV, supporting their independence and improving their health and wellbeing; their 10-bed inpatient unit provides high quality care, rehabilitation and treatment and their Community Services empower people to manage their own health and to live well with HIV.

Every year, The Sussex Beacon need to raise over two million pounds to continue providing these vital services to people living with HIV and we are proud to play our part in helping to reach their target.

Ahead of our wine evening  at Cin Cin Hove on April 6th, why not try out this recipe at home.

This wine evening is in partnership with Jascots Wine Merchants & features wines from Masut de Rive, sustainable wine producers from Friuli Venezia Giulia in the north east corner of Italy.

This dish will appear on the menu that evening as created by our Chef Patron, Jamie Halsall. It is a modern take on a traditional Friulano dish from the Adriatic.

A simple, yet delicious dish perfect as a starter or a light dinner.

 

Ingredients 

12 scallops, removed from their shells and cleaned (shells cleaned and reserved)

1 white onion

1 bunch of flat-leaf parsley

100g of butter, softened

100g of fine breadcrumbs

salt

For the wine sauce:

240ml of Friulano white wine (Sauvignon Blanc as an alternative)
100ml of white wine vinegar
1 tbsp of banana shallot, chopped
450g of butter, diced

Directions 

1. Preheat an oven to 200°C/gas mark 6
2. Place the scallops back in their cleaned shells
3. Finely chop the onion and parsley. Place in a bowl and mix them together with the softened butter to form a paste
4. Season each scallop with salt, and then place a spoonful of the parsley butter on top
5. Get your wine sauce ready. Bring the wine, white wine vinegar and shallots to the boil and reduce until you have 2 tbsp of liquid remaining. Strain the reduction into a clean pan and return to the heat. Add the chilled butter one piece at a time, whisking constantly. Continue to add the butter until 1 or 2 pieces remain then remove from the heat.
6. Cover each scallop with breadcrumbs and cook in the oven for 8 minutes until golden brown. Serve immediately

The Gallo family has been making wine in Isonzo for over 60 years. In the 1970s, Silvano Gallo focused the estate on quality, introducing stainless steel tanks for fermentation, temperature control to preserve fruit character, and minimal handling of the wines to express terroir. Silvanos sons, Fabrizio and Marco, have now taken over after graduating from the school of Enology in Udine.

 

Now with four generations of winemakers, the family is bringing modern ideas to winemaking combined with a hands on approach with great passion and respect for the environment the 28 hectares of vineyard is recognised amongst the top producers of the region. These unique wines are recognised for their elegance and authenticity, especially the 100% varietal wines which are rarely seen in this region.
